Q. What motivated you to write a comprehensive cookbook of vegetarian recipes right now?

A: What motivated me--several years ago--was seeing the handwriting on the wall: That although being a principled, all-or-nothing vegetarian was not a course of action that would ever likely inspire the majority of Americans, the days of all-meat-all-the-time (or, to be slightly less extreme, of a diet heavily dependent on meat) could not go on. Averaging a consumption of two pounds a week or more of meat (as Americans do) is not sustainable, either for the earth or our planet. And, as more and more of us realize this, I thought it was important to develop a cookbook along the lines of How to Cook Everything, but without meat, fish, or poultry. Needless to say, there’s plenty of material.

Q: In the course of writing How to Cook Everything Vegetarian did your approach to food shopping, cooking or dining change significantly?

A: Completely. The more I tried new ways of cooking with vegetables, whole grains, and legumes, the more I enjoyed them. I probably eat sixty or seventy percent fewer animal products than I did three years ago.

Q: Because meatless cooking isn't limited to a single cuisine, your recipes introduce the flavors and techniques of many different cultures and cuisines. How did you manage to cover so much ground? Seems like a daunting task.

A: It’s what I do.

Q: Out of the more than 2,000 recipes in the cookbook do you have a favorite dish or dessert that you turn to again and again?

A: No. There are hundreds I wish I could cook all the time, but one can only cook and eat so much. But in the last week, for example, I’ve made Fava Bean and Mint Salad with Asparagus; Lemon-Ricotta Pancakes; Cornbread Salad; and Red Lentils with Chaat Masala.

Q: Why is simplicity so important in cooking? What does the novice home cook need to know to cook and eat well?

A: Simplicity is only important because it’s the way to learn to cook; it’s very difficult to start cooking with complex dishes. For people to learn to cook, they must start simply--the way everyone used to cook. And, for most of us--including me--there’s no reason to carry things much further. Even the simplest cooking is rewarding, enjoyable, and--obviously--the healthiest and best way to eat.

This is the one I've been looking for!

Let me start by saying I'm a busy working mom of two. I grew up eating Hamburger Helper and hot dogs, so I didn't learn to cook until I was an adult. My dad's had triple bypass and my mom's having gastric bypass, so we're trying to learn from their mistakes and eat not entirely vegetarian, but definitely a more plant-based diet. I'm sure all this sounds familiar to a lot of people!

How to Cook Everything Vegetarian is exactly the cookbook I've been trying to find for a long time. It has the simple, everyday recipes that I sometimes need, combined with a LOT of wonderful vegetarian dishes from ordinary supermarket ingredients. How about Peanut Soup, Senegalese Style? Or Korean-Style Noodles in Cool Bean Broth (in less than 20 minutes for when the kids are whining for dinner) Mustard Cheese Fondue?

This book is written in Bittman's typical `theme and variations' style, with a basic recipe (like for waffles) and then a sidebar or list following the recipe that gives variations (like a list of things you can add to waffles for flavoring). The great thing about this is that it means you rarely have to reject a recipe because you don't have the exact ingredients, just go with a variant. The only quibble I have with it is, it's sometimes difficult to keep track of what you are supposed to sub out & sub back in when you have a crying toddler on your ankle.

A basic cookbook should also walk you through basic techniques and ingredients. I was a little surprised to see the vegetables chapter was nearly 200 pages. Then I looked through it and realized a lot of that is guidance on how to select and prep the various vegetables. It's also helpful that he includes substitution suggestions - I may be out of broccoli, but if I can make the same recipe with green beans, then I can forgo the trip to the store one more day.

Another nice thing about this cookbook is, unlike most vegetarian cookbooks I have seen, it doesn't rely heavily on unusual ingredients or meat substitutes. It seems like there has to be a happy medium between burgers & fries on one hand and stuff you've never seen before. Surely we can make a healthy diet based on basic veggies, fruit, grains, and legumes, and that's JUST what this book focuses on.

But it doesn't matter how great the book is if the recipes aren't good! So I tried a few. The Spicy Autumn Veggie Burgers (we made less spicy for the kids) were terrific with a dollop of peach chutney, although the kids preferred ketchup. I was pleased at how quickly they came together too. The Glazed Carrot Soup the kids ate without any complaint at all. And oh my the Apple "Fries"!!!!

Because I'm sure people are wondering - yes, he has another cookbook called How to Cook Everything: Vegetarian that came out several years ago. This is NOT just a remake of that slim volume. This is a completely new book. (Why his publishers wanted to do two books with titles the same except for a colon I'll never know.) There's no exact overlap with How to Cook Everything, that I saw - even for recipes like Waldorf Salad, that are essentially the same in both books, there is some slight variation and different text that shows that this was re-written, not just a cut-and-paste job.

In short, I'm very happy with it. I've cooked out of it every day since I got it and I'm sure this will be one of my `go-to' cookbooks for years to come.

Useful and fun

"How to Cook Everything" is one of the more useful cookbooks I've owned. Each type of food has a "Basics" section that includes lots of preparation tips. The recipes themselves are detailed enough for beginners, and not so esoteric that you have to make a trip to a specialty grocery store every time you want to cook something. Especially helpful are the suggestions for expanding on each dish. For example, after the basic Chicken Kebab recipe, there are four modifications, including Chicken Kebabs in Yogurt-Cumin Sauce.

I'm relearning the way I prepare even the most basic things, like sandwiches and scrambled eggs. Who would have thought scrambled eggs could be so good? And the Pan-Grilled steak has weaned me from the backyard grill forever. No other cookbook would warn you that "clouds of smoke will instantly appear; do not turn down the heat." That bit of fear that your fire alarm will go off at any second just adds spice to the whole cooking experience.

The breadth of this book is amazing. Besides having nearly every type of Western cooking you can imagine, it also has recipes from Japan, India, Thailand, and... you get the idea.

There is one drawback -- this book has no photos, just a few hand-drawn illustrations. However, the book is so big that if it did have photos, it would cost much more.

It's o.k., but the same problem I always have with Bittman
By Cookin' up a storm
I'm a vegetarian of 15 years (with a meat-eating but open minded fiance) and an avid home cook. I got this book for Christmas and have slowly been exploring it. It's an interesting book and there are a lot of recipes that I'm tempted by, but it's the same problem I have with "How to cook everything": something is always wrong with the recipe. For example, his kosher pickles: the first time I tried making them with his measurements, the pickles were inedibly salty (and I love salt!) I'm now working with about a third less salt than he recommends and it's getting better. And that's what I always find with his recipes: they give you a promising start but require some major tinkering before they are really good, and I don't usually feel up to committing to that sort of trial and error. I am a passionate fan of Debbie Madison's "Vegetarian Cooking for Everyone." As an example of the difference, this week I had a dinner party and I made her cauliflower salad with green olives and capers even though I'd never tried it before, and it was a hit. Having used her book so much, I trust her recipes to be at least decent right out of the gate. I would never serve a Bittman recipe that I hadn't made before to guests because there are pretty good odds that the initial recipe needs some changes.
That being said, I'm certainly not sorry that I have this book. It has a good section on condiments that I'm sure I'll make use of fairly often, and it's a good cookbook to have on hand if you're tinkering in the kitchen and want some perspective on your technique. It's really more of a reference book than an book of recipes, and in that it is useful. But if you want ideas for delicious, satisfying vegetarian food, get "Vegetarian Cooking for Everyone."

May help student understand how to narrow answer choices, at least somewhat. Needs more practice tests.

I am on my second kid taking these tests and many of these books have cycled through my house.

First of all, the “money back” guarantee for a higher score is nonsense. First of all, if you take a test a second time you tend to do better (familiarity with the test). Even random fluctuations may have you end up with a “higher “ (but not significantly higher) score. And should your score not increase, you only have 90 days to get a refund, and you have to explain why you did not find it helpful. Since that gives you less than 3 months to study, take the test, get the results and write an explanation and mail it, I doubt they have to make good on many of these guarantees. In fact, I find the guarantee disingenuous (there is an SAT word!) and irritating. It reminds me of the rebate forms designed to be so difficult to complete that most people do not bother.

I got this book because my kid just took the new PSAT. She did very well but neither she nor I could figure why she missed some of the questions on the reading section. The explanations offered by College Board did not clear up our confusion. I do not claim to be a guru in English, so I hoped that this book would help to clarify some of the answer choices.

I would say the explanations in this book were somewhat helpful, more in understanding how the writers of the PSAT think, rather than the actual concepts in English. As far as I am concerned, some of the answers are still matters of opinion. As my kid said “well, maybe this will help me figure out what they want” so maybe that will help.

I did like the short section outlining the types of questions on the PSAT as command of evidence, vocab in context, global questions, detail questions and rhetoric questions. Knowing that the types of questions fall into these categories can be useful. Also, the small amount of info on essay writing may or may not be useful (do not know since the PSAT did not have an essay section).

It is also helpful to take practice tests, but there are not that many questions in this book (it is pretty thin for a test review book at 203 pages) and there is only one practice exam. In some Kaplan books you can get more practice exams online, not for this one. I would like to see at least three full length practice tests, so the student can take one, study, note any improvement, take another, study again and take a final version. Then again, it is not very expensive. I highly suggest you get the paper version if you decide to buy, rather than the Kindle version. You want to be able to write in it.

I will note that my kid does very well on these sort of exams already, I think the book might be more useful for a kid scoring in the middle of the PSAT range.

A good place to start.

Felt like this is a review book, not your typical Kaplan book. Use this as a place to start, and then find other workbooks. Includes an introduction, and how to prepare for the test. Discusses the Reading Test and gives you several practice tests. Then the Writing and Language test, which also includes practice tests. Then 20 pages on the Essay Test. I like the testing myths, I always think that's a great idea. I also like the test reviews.

SAT prep

Kaplan makes some great study aids. Their New SAT guide is also terrific. It's smaller than the usual Kaplan SAT books because it focuses on Evidence-Based Reading, Writing, and Essays for the exam. I think this is ideal for someone who may have a good handle on most of the test, but wants some extra practice for this portion.

The book has four sections - The Reading Test, The Writing & Language Test, The Essay Test, and Practice Test. Each section has a lot of practice and sample questions followed by answers and explanations and the practice test is in test format complete with an answer sheet. Before these sections though, the book has some information about how to get the most out of it, what to expect on test day, and some general test-taking strategies and common myths. The back of the book has an Essay Test Rubric and several blank pages for notes.

I've been happy with Kaplan products to help me study over the years. I think this is a good one to help prepare for the SAT's reading and writing portions.

This beautiful photographic masterpiece presents one of the great monuments of Japanese architecture - the world-famous Katsura palace. No other building in Japan holds such deep meaning for the people of the West. It is a marvelous evocation of all the richness and variety, the delicacy and color, of ancient Japan and a vital force in today's world of art. In his introductory essay, Walter Gropius, famed Bauhaus architect, discusses Katsura's relevance to the West and commends to all students of art and architecture its "sublime, mature solutions of the intricate problems of space and human scale - the very media for the art of architectural creation."

Built in the years 1620-1647 for the imperial prince Toshihito as a country villa near Kyoto, Katsura is at once the crown of the aristocratic tradition and a brilliant reflection of emergent popular elements. In his interpretive essay, the internationally-known Japanese architect Kenzo Tange identifies the great cultural forces that inspired the design of the palace and its gardens with the two basic orientations to life which have long opposed each other in Japan: the traditional "Yayoi" culture and the primitive "Jomon" culture. He shows how these forces and the mediating influence of Zen, are harmonized to create a work of surpassing excellence and vitality.

Katsura has profoundly influenced Japanese architecture and artistic taste and the ideas of modern architects, landscape designers, and interior decorators. Yasuhiro Ishimotos's photographs reveal to us of the supreme achievements in the artistic histories of the world.

ADVOCATES DEVELOPMENT OF LIMITED WAR DOCTRINE

The main premise of this 1958 book is that the USA must plan for a limited war and not assume that all wars will be total ones, like World War II. Kissinger argues that our failure to do this caused great trouble in Korea and put us at a disadvantage in dealing with the Soviet Union. Chapters discuss our allies, Soviet propaganda, and disarmament. The book is well written and most persuasive.
Of course it should be clear to everyone that a book over forty years old is of limited value today, especially as the Cold War is over. Kissinger warns us about the now disproved missile gap and fails to appreciate the Chinese-Soviet split, which had already started.
My one major disagreement concerns Kissinger's contention that limited use of nuclear weapons in war could be more appropriate than convential ones. He ignores the profound consequences crossing such a line would entail. He is right that any side using regular forces would be vulnerable to nuclear attack, but that does not mean that we must use them to start with! In fact, not using them sends the world an important message about how serious we are in wanting to avoid a total, nuclear war.

Pertinent to todays political situation

Why write a review on a book about nuclear weapons and foreign policy that is nearly fifty years old and does not reflect the current geo-political situation? Because it is a darn good book. Kissinger has a way writing that is succinct and to the point, he has the genius of explaining complicated subjects in simple terms. The basic premise of the book is that the United States should not rule out the use of nuclear weapons in foreign policy. He argues persuasively that the limited use of nuclear weapons need not escalate into cataclysmic nuclear exchange. The forces of history have made this a moot point. The Soviet Union lies in the dustbin of history and the surviving Russian republics are not capable of launching an effective nuclear counterstrike- the United States alone is now the worlds surviving superpower. It is entirely conceivable that we could initiate a nuclear strike with relative impunity now. Whether or not this would be politically or morally correct is a matter of debate. But more importantly, the development of smart weapons have made the use of massive nuclear or even limited nuclear attack unnecessary.
But what makes this book worth the read is Kissingers insightful political analysis. For instance, he argues that it is impossible to use traditional diplomacy based on good faith and a willingness to come to an agreement with a revolutionary power because such governments do not operate under the presuppositions of Western civilization. Diplomatic meetings between such diverse powers are not seen by revolutionary powers as opportunities to come to an agreement and to avoid conflict, but as elaborate stage plays which to seek to influence and win over public opinion in other nations. This is a lesson that those who wonder why the Moslem world hates the United States and who believe that if we just sit down and talk we can come to a reasonable understanding need to learn. Kissinger would say that such people live in a fools paradise.
The use of force is not an evil but a strategic necessity if civilization is to be preserved. Many liberals today believe that if the United States would just disarm and be more understanding of the Moslem world that the Osama Bin Ladens of this world would cease their hatred of us. What these starried-eyed liberals do not understand is that the Moslem extremist do not hate us for what we do, but for who we are. Their attacks will not stop until our civilization is destroyed. Kissinger noted that the Turks did not stop voluntarily at the gates of Vienna or the Arabs in Southern France. Rather, a line was established because they had been defeated in battle, and the decay of Arab power did not set in until the West exercised unremitting pressure to push them back.
Kissinger does not argue for the use of force over diplomacy, but that diplomacy is ineffective when the use of force has been abdicated. Only when a nation stands ready to defend itself and is willing to use force will diplomacy work. Thus, in our conflict with the Moslem world, if the United States unilaterally declares it will abdicate the use of force and will not retaliate for terrorists attacks against our citizens (or only purse retaliation only in the courts of law) there is no reason for Moslem extremists to give an inch- they will get everything they want. Yes, it is still worth the read.

Kissingers Chrystal Ball

I read this book in college as required reading at the time, 1966. The concept of Limited War as stated by Kissinger was a vision into the future. Limited war as a function of human life on earth, the doctrine of survival. I believe it was this concept that saved the world from Nuclear war during the Cuban Missile crisis when the Soviets realized it was a mistake to tempt such an apopolyptic battle. It is the spectre of that battle that keeps the world safe, and most importantly, for those who know and care, Dictators with no reqard for human life or existence, not even their own, must be reduced to a very small space on earth.
I now have ordered that great book again to re-read.
